I cook up a large batch of whatever I'm making, then freeze it in portions. For example, to make a quick meal of chicken and rice, I can thaw in microwave and stir together sauteed chicken, cooked rice, cooked carrots, sauteed mushrooms, sauteed bell peppers -- and add the right amount of chicken broth, or add an Oriental sauce.

Simple Spaghetti - take a little olive oil and saute some sliced garlic. Just before the garlic turns brown, add a can of tomatoes, salt and pepper. Cook for about 5 minutes to warm everything through and intensify the flavors. Add cooked pasta and toss well. Yummy!
