Italian Stuffed Mushrooms

This recipe comes from my friend Linda Unemori. They are easy to make and a big hit whenever I make them.

Ingredients:
18 to 22 large mushrooms (White or Cremini)
1/2- to 1-lb Italian sausage (mix of hot and mild)
3/4 cup onion, finely chopped
4 to 5 large garlic cloves, minced
5 tablespoons olive oil
1/2 to 1/3 cup breadcrumbs
1 egg
1/3 to 1/2 cup freshly grated parmesan cheese

Directions:
1. Preheat oven to 350 degrees.

2. Remove stems from mushrooms and chop. Remove sausage from casing. Heat olive oil and add sausage, garlic, onion and stems, crumbling sausage as you cook. Cook well and drain.

3. Let mixture cool and mix with breadcrumbs, egg and cheese. Stuff mushrooms and bake for 15 to 20 minutes. Remove from oven and sprinkle with a little extra cheese.

Excellent Recipe! Sure would be good topped with hollandaise sauce, or a white wine chesse sauce.
