Orange Hummus

I love hummus, but it didn’t occur to me for a long time to add orange juice to it, to make it more flavorful. I imagine you could try other juices as well (although I’m not sure how good Kool-Aid hummus would taste).

Ingredients:

  • Two cans garbanzo beans, rinsed and dried
  • 1/2 teaspoon each of cumin, coriander, ginger, dry mustard, turmeric, and paprika
  • 3/4 cup orange juice
  • 1/3 cup tahini
  • 1/2 teaspoon salt
  • 3 tablespoons cider vinegar
  • Three medium garlic cloves
  • 1 teaspoon soy sauce
  • Cayenne to taste


Directions:

  1. Combine all ingredients, and mix in blender until smooth.
  2. Cover mixture and refrigerate for two hours, so flavors blend together.
  3. Remove from refrigerator thirty minutes before serving.
  4. Drizzle with additional olive oil, if desired.
  5. Serve with pitas, pita chips, and multi-seed crackers or fresh-cut carrots, celery, and peppers.

There was no olive oil listed in the ingredients. Most of the recipes I've found add a few tablespoons to the mix and then might drizzle a little more on the top as the finale. Was this left out of the recipe posted?

Hi K- I actually pulled this recipe off a recipe cared after a weekend going through my aunt's recipe box. She received these recipes from her friends after her and my uncle's home burned in the Oakland, CA fires years ago (nice gift from friends). There was no credit on the recipe that her friend wrote on the card, but had I known it was from The Enchanted Broccoli Forest, I surely would have credited. Thanks for pointing this out, as recipes come to all of us in many different ways.
