Orange Hummus

I love hummus, but it didn’t occur to me for a long time to add orange juice to it, to make it more flavorful. I imagine you could try other juices as well (although I’m not sure how good Kool-Aid hummus would taste).

Ingredients:

  • Two cans garbanzo beans, rinsed and dried
  • 1/2 teaspoon each of cumin, coriander, ginger, dry mustard, turmeric, and paprika
  • 3/4 cup orange juice
  • 1/3 cup tahini
  • 1/2 teaspoon salt
  • 3 tablespoons cider vinegar
  • Three medium garlic cloves
  • 1 teaspoon soy sauce
  • Cayenne to taste


Directions:

  1. Combine all ingredients, and mix in blender until smooth.
  2. Cover mixture and refrigerate for two hours, so flavors blend together.
  3. Remove from refrigerator thirty minutes before serving.
  4. Drizzle with additional olive oil, if desired.
  5. Serve with pitas, pita chips, and multi-seed crackers or fresh-cut carrots, celery, and peppers.

Orange Hummus Carrots give this a lovely orange tint, and a nice boost in nutrition. Cumin and ginger add zing. Begin with Basic Hummus: * 3.5 Cups cooked garbanzo beans (2 – 15 oz. cans) * 1-2 large cloves of garlic (to your taste) * 1/4 C toasted sesame seeds (or ¼ C – ¾ Cup tahini) * 3-6 Tablespoons of Lemon Juice (depending on how thick or thin you like your hummus)* Add to the basic recipe: * 3.5 Cups cooked garbanzo beans (2 – 15 oz. cans) * Be sure to drain them well, so the hummus is not too watery. Begin with ½ cup, and see how you like the color and flavor. Feel free to add more, up to 1 cup. * 1 t ground cumin * 1 – 3 t finely minced ginger, to your taste. Blend together in a blender, food processor, or molcajete to the consistency you like. Use this hummus recipe as is for a delicious and nutritious snack with pita chips, apples, and cut up fresh veggies. This makes a nice sandwich spread on whole wheat pita with cucumber and provol

There was no olive oil listed in the ingredients. Most of the recipes I've found add a few tablespoons to the mix and then might drizzle a little more on the top as the finale. Was this left out of the recipe posted?

Hi K- I actually pulled this recipe off a recipe cared after a weekend going through my aunt's recipe box. She received these recipes from her friends after her and my uncle's home burned in the Oakland, CA fires years ago (nice gift from friends). There was no credit on the recipe that her friend wrote on the card, but had I known it was from The Enchanted Broccoli Forest, I surely would have credited. Thanks for pointing this out, as recipes come to all of us in many different ways.
