Smoked Salmon Tartare

Here’s a simple appetizer that’s fast to prepare, yet classical in design and taste.

Ingredients:

1 pound Smoked Salmon fillet (de-boned, skinned and diced)

1/2 cup pimento stuffed green olives (diced)

2 heaping tablespoons mayonnaise

1 tablespoon spicy brown mustard

2 tablespoons shallots (minced)

2 tablespoons fresh parsley (minced)

1 teaspoon fresh garlic (minced)

2 hard boiled eggs (peeled and diced)

1 mixing bowl

Procedure:

1. Combine smoked salmon, green olives, shallots, parsley, garlic and boiled eggs, folding together gently but thoroughly.

2. Now fold in mayonnaise and spicy brown mustard completely but with a light hand.

3. Cover with Saran Wrap (airtight to seal in flavors, letting them incorporate) and chill for one hour.

4. Smoked Salmon Tartare is excellent served with an assortment of bread wedges and crackers. I personally like toasted pumpernickel bread squares and Ritz crackers.
