Jalapeño Pie

This is a quick and easy take along since it can be served at room temperature. It disappears fast!

One 7-ounce can jalapeno peppers
1/2 pound grated sharp cheese
Four eggs, beaten with salt and pepper

Drain and seed the peppers. Cut into very thin strips. Line the sides and bottoms of a 9" pie plate. Cover peppers with grated cheese, pressing down lightly. Pour beaten eggs over cheese and bake at 350° F for 25–30 minutes. After removing from oven, allow to cool a few minutes. Then cut in wedges and serve from the pie plate and serve as finger food.
