Corn and Chicken Chowder

Ingredients:
1/2 cup of Butter
2 Cloves Garlic
1/4 White Onion
1 1/2 cup Flour
1 1/2 cup Chicken Stock
1 cup Milk
3 cup Fresh or Frozen Sweet Corn
3 small Potatoes (diced)
2 large Chicken Breasts (diced)
5 Cherry Tomatoes (diced)
1 teaspoon Cumin
1 teaspoon Smoked Paprika
1 teaspoon Pepper (or to taste)
1 tablespoon Garlic Salt
Cilantro (for Garnish)

Instructions:

  1. Cook butter, garlic, and onions until translucent
  2. Fish out solids (You can throw it away or food process it and add it later)
  3. Add flour
  4. Cook until light brown and all liquid is absorbed
  5. Add chicken stock and milk
  6. Whisk until smooth
  7. Add remaining ingredients and seasoning
  8. Bring to a boil stirring occasionally
  9. Lower temp. to a simmer
  10. Cook (stirring occasionally) until potatoes are fork tender, chicken is cooked through, and soup is as thick as you like
  11. Garnish with Cilantro

It takes a little while to make, but is great for Sunday dinner and you can do other things while making it. It also freezes well.
