Ingredients:
1/2 cup of Butter
2 Cloves Garlic
1/4 White Onion
1 1/2 cup Flour
1 1/2 cup Chicken Stock
1 cup Milk
3 cup Fresh or Frozen Sweet Corn
3 small Potatoes (diced)
2 large Chicken Breasts (diced)
5 Cherry Tomatoes (diced)
1 teaspoon Cumin
1 teaspoon Smoked Paprika
1 teaspoon Pepper (or to taste)
1 tablespoon Garlic Salt
Cilantro (for Garnish)
Instructions:
- Cook butter, garlic, and onions until translucent
- Fish out solids (You can throw it away or food process it and add it later)
- Add flour
- Cook until light brown and all liquid is absorbed
- Add chicken stock and milk
- Whisk until smooth
- Add remaining ingredients and seasoning
- Bring to a boil stirring occasionally
- Lower temp. to a simmer
- Cook (stirring occasionally) until potatoes are fork tender, chicken is cooked through, and soup is as thick as you like
- Garnish with Cilantro
It takes a little while to make, but is great for Sunday dinner and you can do other things while making it. It also freezes well.
