Wilted Lettuce (Summer Salad)

1 package leaf lettuce
5 slices of bacon
1/4 cup vinegar
1/4 cup water
1 tablespoon sugar
Chopped fresh green onions


Wash and dry lettuce then place in serving bowl. Fry bacon and set aside, keeping grease in pan. Mix vinegar, water, and sugar into bacon grease and stir over medium heat until blended well. (If mixture is still too tart, add more sugar to taste.)  Pour mixture over lettuce directly from pan, then place pan over the serving bowl to hold in flavor. Leave for 3 to 4 minutes, until right before serving. When you remove the pan, crumble the bacon over lettuce and add the chopped green onions. Mix and serve.

We also make this, but we put red radishs in it also.Yum , can't wait till my garden grows.

I've personally sampled this dish many times since the author is my mom and I can attest to how delicious it is! If you're not from the south, don't be scared of the bacon grease thing...embrace it! It's delicious - just like hot bacon dressing, only better. Give it a try - you won't be sorry!
