It’s summer time and time to BBQ, and what’s better to compliment your BBQ dishes than potato salad? Here are two recipes to do this old friend in a new way. While most people do potato salad with mayo and eggs, these two recipes don’t have either.
I come from Finland, and potato is the most eaten vegetable in Finland. Remember how in the movie Forrest Gump Bubba can list tens of shrimp recipes? I could probably do the same with potato. This time I’m sharing my Finnish Potato Salad recipe and the one I learned while living in Germany.
Finnish Potato Salad
6 potatoes cooked and cooled down
1 onion
1 apple
2 whole pickles
1 cup sour cream
1 tsp mustard
1 tsp lemon pepper
1 tsp paprika
Garnish with dill or parsley
1. Boil the potatoes with skin on. Cool down, peel and dice.
2. Dice the onion, apple and pickles and mix with potato dices.
3. Mix sour cream, mustard, lemon pepper and paprika together well and them mix it with the potatoes and the rest of the ingredients.
4. Cover well and put in the fridge at least for 30 minutes before serving. Garnish with fresh dill or parsley before serving.
Variations: If you are more used to making the potato salad with mayo, you can give sour cream a try mixing 1/2 sour cream and 1/2 mayo instead making this salad only with sour cream.
German Potato Salad
6 potatoes cooked
1 onion
5 slices of bacon
1/2 cup white vinegar
1/3 cup water
1 tablespoon mustard
salt and pepper to taste

parsley
1. Boil the potatoes with skin on. Red potatoes work the best. Cool down (peel if you wish) and slice the potatoes.
2. Cook the bacon crisp, remove from pan, but don’t get rid of the bacon fat.
3. Dice the onions and cook them golden in the bacon fat.
5. Dice the bacon and mix with diced potatoes, mix the sautéed onions in too.
6. Mix vinegar, water, mustard in a separate dish and then mix with the potatoes.
7. Cut green onion in small and mix with the salad. Add salt and pepper to taste.
8. I usually skip the salt because bacon is so salty. Garnish with parsley.
Variations: You can do the salad with either green onions or parsley, or both. Also, you can use red wine vinegar or cider vinegar instead of white vinegar. You can also use mustard seeds instead of mustard.
