Grünkohl (German Kale)

This dish is good with pork or beef steak and mashed potatoes. I don’t really measure anything, so these are rough translations of what I do.

Ingredients:

  • 750 grams kale (one bunch)
  • About 60 grams of fat
  • One medium onion
  • 1/2 cup water or beef bouillon
  • 2 spoons of oatmeal
  • A little whipped cream


Directions:

  1. Wash kale
  2. Boil leaves on medium heat
  3. Mince cooked leaves
  4. Sauté minced onions in fat
  5. Add kale, and turn mixture over for a few minutes
  6. Add some water or bouillon
  7. Let steam for 1/2 hour
  8. Add some (very little) oatmeal, more beef bouillon if desired, and top with a little whipped cream

My aunt in Germany used to make this dish. But as I remember it had some spices -- nutmeg? I remember my uncle being called in to the kitchen to taste-test it. It had a faintly sweet taste, so perhaps a bit of sugar was involved as well?

Frau Peterson! Das is aber wunderbar! Ich wollte lange ein rezet(?) fur Gruenkohl und Roladen! Meine gute Omi hat mir das leide nicht beigebracht. (Vielleicht war ich doch nicht interessiert, als sie noch lebt.) Ich bin froh, Sie hier zu sehen.
