Irish Colcannon

I’d never heard of colcannon until recently, but now that I know what it is, I wonder if I would ever eat anything else if I lived in Ireland. Kale is my green vegetable of choice, and if forced to choose one food to be stranded on a desert island with, I would skip the bananas and take a plate of mashed potatoes. You can imagine how thrilled I was to learn that the Irish mix two of my favorite foods together, and then drown the whole thing in butter.

Ingredients:

  • 1 pound kale
  • 1 pound potatoes
  • Six green onions
  • 2/3 cup whole milk
  • Salt and fresh ground pepper
  • 1/2 cup Kerrygold butter
  • 8 tablespoons melted butter


Directions:

1. Remove the tough stalks from the kale.

2. Put an inch of water in a saucepan, adding a teaspoon of salt.

3. Heat the water until boiling and add the kale. Cover and cook for up to twenty minutes, or until the kale is tender.

4. Drain kale well and chop finely.

5. In large saucepan, boil water and cook potatoes until tender (about twenty-five minutes).

6. Drain potatoes and return them to the pan, and keeping heat on low to evaporate moisture.

7. Add Kerrygold butter, milk, salt, pepper, and finely chopped green onions and mash all ingredients together with potatoes.

8. Drop in chopped kale and mash again until you have buttery, mashed green potatoes.

9. Make an indentation in each serving of potato and pour melted butter into it. Serve warm.

I've made colcannon with cabbage, rather than kale. I doubt I have ever had kale. I will try it.
