Potato Salad Recipe

Red Potato Salad
2 pounds small red potatoes
3/4 cup fat free mayonnaise
1 tablespoon Dijon mustard
1/2 medium red onion, finely diced
2 celery ribs, finely diced
Salt
Pepper
1/4 cup finely chopped fresh oregano 

Steam potatoes and cool to room temperature. Quarter the cooled potatoes and set aside.

In a large mixing bowl, stir mayonnaise, mustard, onion, celery, salt and pepper. With a large spoon, stir potatoes into mayonnaise mixture. Stir in the oregano. Cover and refrigerate until serving time.
