Spinach Frittata

Discover your inner Popeye and give yourself a protein boost with this cheesy spinach frittata. This nourishing dish is packed full of protein and vitamins, while still being mouthwateringly flavorful and fulfilling.

Ingredients

Two ten-ounce packages frozen chopped spinach

3 cups cottage cheese

1 cup plain bread crumbs

½ cup grated Romano (or any kind of cheese except mozzarella)

Five eggs

Paprika to taste

Directions

Preheat oven to 350 degrees. Next, boil and drain the spinach. Add cottage cheese, ¾ cups bread crumbs, and Romano cheese. In a separate bowl, beat three eggs and mix into the spinach and cheese mixture. Grease the bottom of a baking dish and add remaining bread crumbs. Cook the breadcrumbs in the oven until bread crumbs are browned, about five minutes. Spread the spinach mixture in the baking dish. Beat the remaining eggs and add over spinach. Add a pinch of paprika to taste and bake in oven for forty five minutes. Cool for about ten minutes before serving.
