Summer Squash Casserole

3 pounds summer squash. Yellow Crookneck Squash is my favorite

1/2 cup chopped onions

1/2 cup cracker meal or bread crumbs

2 eggs

1/2 stick butter (you can reduce the amount, or eliminate)

1 tablespoon sugar

1 tablespoon salt

1/2 teaspoon black pepper

Pre-heat oven to 375 degrees.

Wash and cut up squash. Cook until tender, drain thoroughly then mash. Combine all the indregients except 1/2  the butter, which should be melted.  Pour mixture in a baking dish. Spread melted butter over the top and sprinkle with cracker meal. Bake at 375 degrees for 1 hour, or until brown on top.

Serves 6 to 8. Recipe may be halved.
