Yummy Tummy Meatloaf

AHHHHH Comfort food!

2 Servings Recipe.

Preheat oven to 450 or 475

A pack of ground beef or turkey meat (Try to get free range if you can)

1 or 2 Eggs

One can of tomato paste

Clove or two or three of Garlic

One onion

One Carrot

One Green bell pepper

A couple hand fulls of bread crumbs or regular bread (Bear with me this is how my mom gives recipes) and whatever else you think would be good in there.

Whip up both eggs Chop up garlic, onions, carrot, bell pepper and knead into the meat. Add bread crumbs, half the egg mixture and tomato paste, (I always put a little hot sauce in there too!) Knead it all up.

Put into a loaf pan and put in the oven for about an hour but check it throughout.  When its almost finished cooking you can pour the rest of the egg over the top and let it finish cooking (optional).

I always serve this one with whole wheat mac & cheese (annies) and a big salad.  I'm not big on gravy but I'm sure there are a ton of recipes out there that you could fine.
