This was originally called “Everything Chicken” in my step-mom’s cookbook. I loved this dish. And so I begged Liz to make it for my date and our friends before we went to the “Turnabout Dance,” (where the girl asks the boy).
I had asked Karl Felbinger (yes, I remember ALL names), from another school, to be my date. That was a big deal, back then; hooking up with a guy from another high school kinda showed you were cool. My two best friends were dateless, so Karl was kind enough to set them up. I dressed to the nines, so I thought, although looking back, I wonder why the hell I wore black, full-length, crushed velvet gloves. And my hair was so permed and bobbed I looked like poodle with a bad “Dorothy Hamil.”
Karl and the gang showed up and I was so excited to have them love “Everything Chicken” as much as I did. I thought for sure this would place me in the “girlfriend” category. I noticed a lot of giggling and no eating during the course of the meal A meal that takes three hours, mind you, to bake (think TENDER!!). It wasn’t until we got in the car to leave (Karl, myself, and his friends who were not digging mine) that I found out the three of them were stoned out of their gourds and because of that did not feel like eating my chicken. They must’ve found it awful, because doesn’t pot make you eat EVERYTHING??
After the dance, the night came to an end. My girlfriend status was short lived. But my step-mother and I, to this day, still enjoy what we now call “Turnabout Chicken.” She has tried to reduce the fat in it by using low-fat sour cream and soup, but it just doesn’t taste as good.
Here is what you will need. And if, by chance, you are married to Karl Felbinger now, tell him “hi” from his (sober) poodle date.
Chicken Breasts (4...or more, but double recipe)
2 cans Cream of Mushroom Soup
8 oz Sour cream
Budding Beef
Bacon
Line rectangle dish with Budding Beef (ahhhhhh, the health in it all!). Wrap each chicken breast with 2 slices of bacon (I usually cook the bacon a bit so they’re not too soggy). Place breasts on top of Budding Beef. Pour soup/sour cream mixture over top of breasts. Cook at 275 for 3 hours. Go dress for your date.
