Stove Top Easy Chicken Bake

This particular recipe is one that I found in a Kraft Family & Food Magazine. It is not only easy to make, but it is also a quick dinner to put together. It is as follows:

Ingredients:
1 package (6-ounce) Stove Top Stuffing Mix for Chicken
1 1/2 lb. boneless-skinless chicken breasts, cut into bite-size pieces
1 can (10 3/4-ounce) condensed cream of chicken soup
1/3 cup sour cream
1 pkg. (16-ounce) frozen mixed vegetables, thawed and drained

Directions:
Heat oven to 400 degrees F. Prepare stuffing mix as directed on package. Mix chicken, soup, sour cream, and vegetables in 13- by 9-inch baking dish and top with stuffing.
Bake 30 minutes or until chicken is cooked through. Enjoy now or cover and refrigerate. To reheat, microwave each serving on HIGH 2 to 3 minutes.

Note: I try to substitute healthier versions of the ingredients. So, I use stuffing mix with lower sodium or use whole-wheat stuffing mix for chicken. And, I use fat-free cream of chicken soup and fat-free sour cream.

Like many of us, we don’t necessarily have the time to put together an elaborate dinner for our families. Therefore, I turn to dishes like this one for ease of preparation and it’s also healthy.
