Easy Homemade Scalloped Potatoes

This is quick, easy and my kid’s favorite meal! It was my grandmother’s recipe and can be adjusted to make as little or as much as you need!

You will need:
Potatoes (I recommend reds, whites, or Yukon gold. Russets are way too starchy for this meal!)
Velveeta Cheese
Milk
Cubed Ham

Take a Dutch oven pan that you can put in the oven and spray with non-stick cooking spray. Set your oven for 350 degrees.

Peel and slice potatoes, however many you need, into a strainer. Rinse them well under cool water and allow to drain.

Melt equal parts of Velveeta cheese and milk in a saucepan until creamy.

Take the sliced potatoes and layer in the bottom of your Dutch oven pan until the bottom is covered.

Layer ham cubes on top and continue to layer potatoes and ham until you have the Dutch oven pan 3/4 of the way full. Leave room for your cheese sauce. Pour your cheese sauce over top of potatoes and cover. Bake for about thirty minutes, or until potatoes are done. Bake an extra ten minutes uncovered to brown the cheese on top. Serve.

You can add variety to this by mixing in Swiss cheese, smoked Gouda, or mozzarella. Whatever cheese you like, try it. You can also add onions or seasoning to this. Let your mind take you there but this basic recipe is a comfort food! Enjoy!
