Summer is just around the corner and I’m always on the lookout for easy and refreshing treat. I came across this incredibly easy tiramisu recipe from one of my favorites, Australian chef Donna Hay. It takes about 10 minutes to prepare, 30 minutes of cooling time and you are ready to enjoy!
1 container of pound cake (chocolate or swirl work best)
2 cups mascarpone
1/2-cup heavy whipping cream
1/2-cup confectioner’s sugar, sifted
1/3-cup espresso coffee, cooled
1/3-cup coffee-flavored liqueur
Finely grated dark chocolate
Break the pound cake into pieces and set aside in separate bowl. Combine the mascarpone, whipping cream and sugar in a bowl and whisk until thick. Separately mix the espresso and liqueur in a glass and set aside. Take half the pound cake and sprinkle into a glass dish; I used a 5x9 inch size. Pour half the coffee mixture over the pound cake, followed by half the mascarpone mixture and spread evenly. Repeat these 3 steps with the remaining ingredients; sprinkle the dark chocolate on top and chill for at least 30 minutes.
