Brownies are the ultimate crowd pleaser. I’ve never met a soul who didn’t love them. That is why I recently devoted an entire week to brownies on Southern Plate! I hope you’ll drop by and have a look at my other fabulous recipes for the treat everyone loves.
Today’s recipe for peanut butter brownies comes to you courtesy of Wilton, one of Southern Plate’s sponsors. The icing, however, comes courtesy of my grandmother’s tattered and torn family cookbook. This is a family favorite old-fashioned icing, which is actually boiled on the stovetop and poured on the brownies the moment it comes off the eye where it will harden to the consistency of fudge and form a thick layer of delight on top of this richly dense dessert.
For an added spin, the peanut butter in the icing may be replaced with cocoa powder to yield that old-fashioned chocolate fudge icing your granny used to put on her layer cakes!
Peanut Butter Brownies
Recipe courtesy of Wilton
- 1 cup all purpose flour
- 1 tsp baking powder
- 1/4 tsp salt
- 1/2 cup creamy peanut butter
- 6 tablespoons unsalted butter, softened (I used margarine)
- 2/3 cup granulated sugar
- 1/2 cup firmly packed brown sugar
- 2 eggs
- 1 tsp vanilla extract
In small bowl, combine flour, baking powder, and salt. In large bowl, beat peanut butter, butter and sugars with electric mixer until light and fluffy.
Add eggs, one at a time, add vanilla; mix well. Add flour mixture, mix until well combined. Spread batter into prepared pan. Bake 30 to 35 minutes or until toothpick inserted in center comes out clean. Cool completely before cutting.
