Lemon Cookie

I love eating cookies, but I hate baking them. I’d just as soon buy store bought cookies than struggle through making them homemade ... until I found my lemon cookie recipe. Not only do I love lemon cookies, but these are a breeze to make. They are perfect for summertime or any time you want a little lemon zing.

1 package of lemon cake mix
2 eggs
1/3 cup vegetable oil
1 package sugar-free lemonade Kool-Aid (or 1 teaspoon lemon extract)
1/3 cup confectioners sugar

Preheat oven to 350 degrees F

Mix together cake mix, eggs, vegetable oil, and Kool-Aid mix. Using a teaspoon, scoop out the dough and drop on wax paper. Dust with powdered sugar and then transfer to a baking sheet.

Bake for 6–9 minutes. The bottoms will be light brown and the insides chewy. Yields 3 dozen cookies.

Chef’s Notes:
1. You can make this recipe with their the Kool-Aid or the lemon extract. The Kool-Aid seems to provide a bigger lemon bite to the cookies, so it’s really your preference.

2. If your cookies are burning on the bottom, then lay a sheet of wax paper down before you place the cookies on the baking sheet. This will provide a buffer and your cookies will be less likely to burn.
