Don’t ask me about the calorie count; it made my head hurt even contemplating it. I will say though: this is rich enough that you will be more than satisfied with a half-cup serving.

Hello Veronica! This recipe looks absolutely DELISH! I love pistachio, mortadella with pistachios, pistachio ice cream... But you are right, the nuts have tendency to get soggy in ice cream. Yuk! We have a twenty-five year-old gelato maker, so I am sure my husband will be giving your recipe a try soon. Thank you much for sharing!!
