  • Gluten-free pumpkin bread
  • Kids Trail Mix: almonds, walnuts, or pecans mixed with cereal puffs, raisins, or cranberries, and chocolate chips.


Lettuce Have Lunch:

  • Roll deli meat, tomato, and avocado slices up in lettuce for the perfect kid lunch wrap
  • Apples with peanut/almond/cashew butter (use cheese or yogurt dip if child has nut allergies)
  • Crackers with cream cheese

I was confused by your statement "gluten refers to grains like corn and wheat." Corn is not actually a gluten grain. That information could be very frustrating to a person just learning about celiac disease or gluten intolerance. Corn is actually a grain that many people subtstitute for wheat. Is there any way you can clarify this for people in a future article? Thanks.

I may be writing more often on this subject as I too, do the WFGF for health. No celiac disease but certaintly moving in that direction if I didn't put the brakes on. Presently putting together a recipe book for our patients (husband chiro+ nutrition expert). I will pass on your goodies. I have worked with parents helping with their cooking skills. Vegi burgers/millet pilaf/soups et al. I have a problem enjoying the taste of the brown rice pastas and now have tested to stay away from that for a while, incl. oats. On specialized nutrients that are whole food based only Doctors can test for and buy. If you are interested email me and I will connect you with a phone number and possible Doctors in your area who can actually help you change your sensitivity! Yes. Now I can eat wheat and pasta once in a while when I couldn't before. We test children as well. No labs or hair analysis. Just a fantastic energetic muscle testing technique, very comprehensive that works, taught to Docs. Bettye
