Beth’s Swiss Chicken and Asparagus with Basil
- Four skinless, boneless chicken breasts
- Two eggs, beaten
- 4 tablespoons flour
- 2 tablespoons olive oil for browning chicken
- Two garlic cloves, minced
- 1/2 teaspoon onion powder
- Salt and pepper to taste
- 1 cup chicken broth
- 1/2 pound fresh asparagus
- Olive oil (to brush asparagus)
- One eight-ounce box of penne pasta
- 1/4 cup fresh basil, slivered
- 6 ounces shredded Swiss cheese
Directions
1. Cut the chicken into cubes, dredge the chicken into the beaten eggs, and then into flour to bread the chicken.
2. Put oil in a large frying pan, brown the breaded chicken in the oil while adding garlic cloves and onion powder.
3. As the chicken is browning, slowly add broth to chicken mixture; simmer on low until chicken is cooked.
4. Meanwhile, cut the ends off the asparagus and put onto baking sheet. Brush with olive oil and broil for about four minutes on each side. Cool the asparagus and cut into one to two inch pieces.
5. Cook the pasta in boiling water according to label directions; drain and add asparagus and fresh basil to the pan, then mix in the Swiss cheese.
6. Last, add the hot chicken mixture, stir, and serve immediately.
