This is another recipe from my wife’s mom. It is a great soup. It is full of vitamins, is easy to prepare and it really contains no fat. The soup is very hearty and we typically use it for lunch especially at the holidays. The vegetables are all by choice and you can use this soup to empty out your vegetable drawer in your refrigerator. I have made it with several types of squash but banana squash is my favorite.
Ingredients:
½ lb. banana squash
½ onion, chopped
½ bell pepper, chopped
3 carrots, sliced
1 large potato, cubed
1 medium turnip, cubed
2 zucchini, sliced
2 medium yellow squash, sliced
1 cup of fresh corn (or one small can of corn)
1 cup thinly sliced cabbage
1 tsp. each oregano, basil and garlic
2 envelopes of Lipton Beefy Onion Soup Mix (for gluten free, see note below)
1 large can stewed tomatoes
Directions:
1. Peel banana squash and cut into 1 inch cubes
2. Spray bottom of a large pot with Pam (or very lightly oil with olive oil)
3. Sauté bell pepper and onion together until onion is translucent
4. Add squash, potatoes, carrots and turnips to pot.
5. Add enough water to cover vegetables and then bring to a boil
6. Reduce heat and simmer for 5 minutes
7. Add zucchini, yellow squash, can of tomatoes, Lipton soup mix and spices and cook another 5 minutes
8. Add corn and cabbage and cook another 5 minutes
9. Taste and repeat spices or add salt/pepper to taste.
Optional:
We typically serve this soup with Parmesan cheese. It is very tasty but the cheese will add some fat to the dish.
You can also add some cooked chicken to the soup if you desire. As with the Parmesan, this will add some fat to the dish.
Finally, you can add some pasta to the dish at step 7 if you like.
Gluten Free:
To make a gluten free version of this soup, use Lipton Onion Soup Mix instead. You should double check the label but according to Unilever, they will call out any of the top 8 allergens including gluten. That includes any allergens hidden in the “natural flavors”. My box of Lipton Onion Soup is OK but the boxes of Lipton Onion and Mushroom and Lipton Beefy Onion that I checked both have wheat/gluten in their ingredient lists. :(
