On our usually Tuesday girls night in—we stay home, cook, drink and chat—we decided to try this recipe. We were amazed how easy it was and how wonderful the honey-mustard dressing was. The yield is for two people, but being the sauce-dressing lovers that we all are, I quadrupled the recipe for five of us. There was enough dressing for me to bring the rest to work for lunch. Try this recipe, it is quick—under fifteen minutes to prepare—and very easy with not much clean-up time.
Popcorn Chicken Salad
1 cup frozen popcorn chicken
2 tablespoons mayonnaise
4-1/2 teaspoons honey
2-1/4 teaspoons white vinegar
1-1/2 teaspoons Dijon mustard (I used honey mustard and it was great)
1/8 teaspoon sesame oil
2 cups leaf lettuce
1/2 cup fresh snow peas
1/2 cup canned bean sprouts, drained
1/2 cup mandarin oranges, drained
1/2 cup chow mein noodles
Directions:
Bake chicken according to package directions. Meanwhile, for dressing, in a small bowl, whisk the mayo, honey, vinegar, mustard, and oil until smooth. Divide lettuce between two plates; top with the peas, bean sprouts, oranges, chicken, and noodles. Drizzle with dressing.
Yield: 2 servings.
This recipe is very easy to double or even triple. I highly recommend this for an evening when you want a quick tasty dinner.
