Nang’s Pumpkin Bread

By: Laura Roe Stevens (View Profile)

This is a special recipe that was my grandmother, Nang Nang’s. My sister and I try to duplicate hers each year, but we haven’t managed to do it just quite. My Nang would always bring this bread for Thanksgiving or Halloween and hers always had an amazing fudge-like top layer that is just supposed to evolve somehow in the cooking process. It’s sinfully yummy and you’ll find that you’ll need to have several small loaves around; all the kids love it too—so they go fast!

Combine the following ingredients and mix well:

3-1/3 cups of sifted flour

1 teaspoon of baking powder

1 teaspoon of baking soda

1-1/2 teaspoons of salt

1 teaspoon of cloves

1 teaspoon of nutmeg

1 teaspoon of cinnamon

Make a well in center of these and add:

1 cup of oil with four eggs beaten together

2 cups pumpkin

3 cups sugar

Beat with mixer until well mixed.

Bake 1 hour at 325° F in greased little bread pans.

(My sister advises to check at 45 minutes.)
