Three years ago our teen-aged daughter decided to stop eating meat. My husband concocted this fabulous hot pasta salad that is filling and delicious. It is made with Orzo, which is a teeny little pasta that comes either tri-color or semolina. Orzo can be found near your regular noodles in any grocery store. Boil salted orzo for 8–10 minutes then drain, add all ingredients and toss until cheese is melted, then add the spinach and serve while still hot. You can add more Mozzarella cheese if you wish, which we often do. It can even work as a cold pasta salad although I still prefer it as a hot salad. It has become a staple in our home like mac and cheese is in some peoples. Hope you like it.
Ingredients
1 cup Orzo
One can black olives (when I’m nice I’ll even cut them in half for my daughter ... sometimes not)
1/3–1/4 cup parmesan cheese
1/2 cup mozzarella cheese
One tomato (cut into bite sized pieces), (you could also use cherry tomatoes)
Bag of baby spinach (or regular spinach torn into pieces)
Salt and pepper to taste (approximately 1/2 teaspoon each to start)
