Man, I love great dinner entrees that are simple and fast to prepare without all that bothersome prep time. This is easily one of the tastiest pork dishes around town. Try it, you’ll like it!
Ingredients:
3-pound pork tenderloin (trimmed and sliced into 4 ounce Tournedos style round medallions)
2 ounces butter
12 ounce bottle K.C. Masterpiece Barbeque Sauce (It’s my personal favorite, but any will suffice.)
2 ounces honey
1 tablespoon Tabasco Sauce
1 medium size sauce pan
1 large cast iron skillet or griddle (Teflon coated, electric or stovetop burner style)
Procedure:
1. Combine barbeque sauce, honey, and Tabasco Sauce into sauce pan and heat over low flame.
2. Heat skillet or griddle over medium-high flame. When good and hot, melt butter, coating surface area completely. Brown your 4 ounce pork tenderloin medallions on both sides till they’re cooked medium. Don’t over cook ‘em ... you don’t want ‘em falling apart when you finish ‘em off in the barbeque sauce.
3. Submerse your browned pork tenderloin medallions in the sauce pan of barbeque sauce and heat for a few minutes longer. This will allow the pork to absorb some of the sauce.
4. When ready to serve your guests, plate your pork and top heartily with remaining sauce. Spicy Honey Barbeque Pork Tenderloin is excellent when accompanied by augratin potatoes, sautéed summer squash, or with just about anything else you desire.
