CRUST:
2 cups flour 1/2 cup confectioners’ sugar 1 cup butter
Preheat oven to 350 degrees. Thoroughly blend ingredients and press into a 9x13-inch greased pan. Bake for ten minutes.
FILLING:
4 eggs 1 tablespoon grated lemon rind 2 cups sugar 1/2 teaspoon salt 1 teaspoon baking powder 2 tablespoon flour 4 tablespoon lemon juice
Mix well. Pour mixture over baked crust and bake at 350 degrees for twenty-five minutes. Sift confectioners’ sugar over top while still hot. Cool, then cut into squares.
Makes two to three dozen squares.
Note: Meyer lemons may be used in this recipe.
