When I found out I was pregnant, and after a week of hazy shock with a minor miscarriage scare, I decided to celebrate every week that passed successfully.
Sunday is my week end/beginning day. So for the past eight weeks I have made a different dessert.
Last Sunday I made a huge apple crisp out of the hand picked apples my husband and I brought back from PEI.
I follow recipes, so the amounts can vary, but this is approximately what went into it:
Week 14 Apple Crisp
Topping:
1 1/2 cups oatmeal
1 cup brown sugar
1 teaspoon cinnamon
1/2 cup butter (melted)
Combine these ingredients. If it seems too runny, add more oatmeal or too try add more butter.
I sliced about 10 apples, half Cortland, half Macintosh. The Cortlands will hold their shape while cooking, where the Mac's will get mushy like applesauce. Mix these with a tablespoon of white sugar and a sprinkling of cinnamon.
Put the apples in a 9 x 13-inch pan, cover with topping.
Bake at 350° F until finished.
I found the topping to be too sweet, but I have a low tolerance for sweet food with this pregnancy. My husband adored it and had the entire pan eaten in three days.
