Think the best cookies have chocolate chips in them? Okay I can’t argue with that … but the next best thing is right here … What’s the craving you get outside of cookies/chocolate and milk? Delicious salty potato chips …
Potato Chip Cookies
1 cup room temperature butter (two sticks)
1 cup sugar (separated)
1 teaspoon pure vanilla extract
1/2 cup finely crushed potato chips
1/2 cup chopped cashews (or pecans)
2 cups all-purpose flour
Procedure:
Preheat oven to 350 degrees. Cream in mixer the butter and 1/2 cup of the sugar (reserve the other 1/2 cup in a separate small dish). Add the vanilla, and then mix in the chips and cashews. After mixed, blend in the flour slowly, 1/2 cup at a time. Scoop little 1-inch balls and roll in reserved sugar, then flatten them out on baking sheet. Leave in oven for 12–15 minutes or until edges are golden. Let cool and enjoy!
Optional: after cooling, dip cookies halfway into some melted chocolate chips if you really must have that chocolate satisfaction!
