These Cookies Will Make You Famous!

Helen’s Farm Bureau Oatmeal Cookies

325-degree oven, fifteen-minute bake

Ingredients:
1 cup butter
1 cup brown sugar
1 cup white sugar
2 eggs
1 teaspoon butter flavor or vanilla or coconut extract
2 cups flour
1 teaspoon baking soda
1 teaspoon salt
1 1/2 cups coconut
2 cups old fashioned oats
2 1/2 cups raisins
2 cups chopped walnuts 

Directions:
1. Combine first three ingredients until smooth. Add eggs and extract.

2. Mix next three ingredients together and add to mixture. Add the rest and mix well.

3. Use ice cream scoop to make large cookies on ungreased tray. Yes, they have to be big.

4. Bake until light brown on top. Some folks like them a bit underbaked. Can leave a bit more for a crunchier cookie too.

I use all organic ingredients available at Trader Joe’s and many markets. Trader Joe’s sells multigrain oats that are a combination of rye, barley, oats, and wheat. They are the best! Butter extract can be purchased at stores that sell cake-making supplies. You can add flax seed or sunflower seeds, too.
