This is one helluva hearty breakfast. It’s my personal favorite omelet.
Ingredients:
Three raw jumbo eggs (mixed with an ounce of heavy cream, seasoned to taste)
2 ounces diced smoked ham
2 ounces diced roast beef
2 ounces browned pork sausage (crumbled)
Two strips of crispy browned bacon (crumbled)
2 ounces shredded cheddar cheese
1 tablespoon minced green onions
1 ounce butter (for greasing griddle)
One large plastic spatula
One large non-stick flat-top griddle
Procedure:
1. Pre-heat griddle over medium flame (if using electric griddle, pre-heat to 325 degrees). Melt butter, coating griddle.
2. Pour mixed eggs onto griddle, forming a nice big oval shape. Cook eggs for a minute, forming a solid bottom base, then top eggs all over with assorted pre-cooked meats, green onions and cheddar cheese. Cook eggs till nearly done, then using the spatula, perform double fold method, overlapping 1/3 of the omelet, then repeating process, completely enveloping ingredients, creating a nice rectangle shape form. Cook for a minute longer, sealing omelet tight.
3. When served, top Meat Lover’s Omelet with more shredded cheddar cheese.
