What’s an interesting celebration drink besides the usual champagne?

I love Sangria, too. I also like mimosas and mojitos. Someone told me they had something called a "Hibiscus" in a restaurant that was cranberry juice with champagne rather than the mimosa which is mixed with orange. Sounded festive and colorful to me. A nice holiday flare. The good news is you can use inexpensive champagne for drinks mixed with juice.
I think all the suggestions in this forum are great. It's nice to try something new now & then!

How about a Sangria?? There are many different recipes.1 Lemon
1 Lime
1 Orange
1 1/2 Cups of rum (they used Mount Gay Rum from Barbados)
1/2 Cups white sugar
1 (750 Milliliter bottle of Red Oak Vin Nouveau) or other brand
1 Cup orange juice
Directions
1. Chill the fruit, rum and and orange juice well
2. Slice the lemon, lime, and orange into thin rounds and place in a large glass pitcher.
3. Pour in the rum and sugar, then chill in the refrigerator for 2 hours to develop the flavors.
4. When ready to serve, crush the fruit lightly with a wooden spoon then stir in the wine and orange juice. Adjust sweetness to taste.
This recipe should yield about 6 servings.

An 'Axis Kiss' is truly unique and its perfect for a celebration drink. Ingredients include a dash of amaretto almond liqueur, a dash of creme de cassis, and chilled Champagne. Pour the amaretto and crème de cassis into a Champagne flute. Gently top it off with Champagne. It has a blackcurrant, almond, bubbly taste. voila!

prosecco is the italian sparkling wine; cava is the spanish sparkling wine. Both are cheaper than champagne!
