Almond Butter Cookies

I’ve become an almond butter addict. If you haven’t tried it, go out to your local health food store and get some today. Almonds are a great source of protein, calcium, fiber and, most importantly, eating them gives you energy! I usually eat almond butter on toast or an apple, but recently I decided to go online and look for some almond butter recipes so that I could indulge in my addiction even more.


The best recipe I found was from healthycooking.suite101.com. The recipe suggests using Hershey kisses but they are just as good with or without—depends on your mood. 


Almond Butter Cookies (with or without Hershey Kisses) 


Ingredients:  


6 tablespoons butter
2 tablespoons reduced fat cream cheese
1/2 cup almond butter
1/3 cup white sugar
1/2 cup brown sugar, packed
3/4 teaspoons baking soda
One egg
1/2 teaspoon vanilla extract
2 cups white or whole wheat flour
48 dark chocolate Hershey kisses 


Directions: 


1. Preheat oven to 350° F. With an electric mixer, beat butter, cream cheese, and almond butter until creamy. Add sugars and baking soda. Add egg and vanilla. Gradually add flour until a soft dough is formed. 


2. Form dough into 1-inch balls. Place on ungreased cookie sheets. Bake eight to ten minutes or until firm. Remove cookie sheets from oven and immediately place one Hershey kiss in the center of each cookie. Decorate and enjoy! 


Makes 48 cookies
