Every now and then, a recipe comes along that sets up a carnival in your mouth and leaves you limp with pleasure. Yes, I know it’s kind of odd to be speaking that way about a non-dessert item, but it’s true. Because the texture of this cream soup is created with potato, it’s also guilt-free!
1/4 cup olive oil
One medium onion, diced
One large potato, diced
2/3 cup celery, diced
One minced garlic clove
1/2 teaspoon pepper
3 cups (or large bag) chopped broccoli
5 cups chicken broth
1/4 cup fresh (or 1 tablespoon dried) basil
Sauté onion in oil, add potato, celery, garlic, and pepper. Cook about ten minutes. Stir in broccoli, broth, and basil. Simmer until potato is soft. Process through blender in batches until smooth.
