I created this recipe as something quick and healthier to eat on our weeklong hiking trip. Everyone loved it, so I thought it might be worth sharing. You can cook the pasta at home ahead of time to save cooking time on site.
1 pack whole wheat penne pasta
5 stalks asparagus chopped in one-inch pieces
1 tablespoon dehydrated minced onion
3 tablespoons butter
1 cup feta cheese
1/2 cup sundried tomato
1/4 cup toasted pine nuts
Salt and pepper to taste
Cook pasta according to package directions, drain, and set aside. Sauté onions, asparagus, and sundried tomatoes until tender and butter is slightly browned. Add salt and pepper, pine nuts, and feta cheese, toss with pasta, and serve.
