1 part rice
2 parts liquid
In a sauce pot with fitted lid, bring the liquid to a strong boil. Meanwhile, rinse the rice in running water. Add the rinsed rice to the boiling water, stir to make sure all rice is incorporated into water. Reduce heat to the lowest setting and put the lid on. Let cook for 30-40 minutes and you'll have perfect rice.
Here are some ideas for the Coconut Rice. I add 1/2 part coconut milk to the liquid (which is always water). I have used condensed coconut milk in a can and I have also used coconut 'milk' that you buy in the dairy section (like soy milk). Both taste great. And, when the rice is done, I add a good shake of salt which helps to enhance the flavor.
For my rice, I know that brown rice is healthier but my family loves white rice. So I mix the two. I usually do 1/2 brown, 1/2 white. It's a good combination and they don't even notice!
I'm sure they're are tons of variations of basic rice. Perhaps using broth? or lime? those might be good! what combination would you try?
