Cornish Hens with Stuffing

1 Cornish hen per person eating (wash well)


1 large skillet cornbread (cooled down)


1-2 cans chicken broth of choice


1 tbsp. onion powder


1 tbsp. salt


1 tbsp. ground black pepper


Add sage powder to taste


1 dash of lemon pepper seasoning


1/2 chopped onion of choice


2 freshly boiled eggs (cut into small chunks)


1/4 cup melted butter or substitute


1/4 cup water (for cooking stage)


In a large bowl, crumble up cornbread (with hands until like a fine meal texture) adds:  broth, onion powder, salt, pepper, sage, lemon pepper seasoning, chopped onions and eggs. Mix well as to distribute ingredients. Take each Cornish hen and add stuffing into body cavity until almost full. Put Cornish hens in a foil wrapped pan with sides , spray pan with coating first so they won’t stick . Add 1/4 cup water to pan bottom. Cover pan with a layer of foil, tuck sides of foil under pan edge and place into pre-heated oven at 325-350 degrees.


Bake for 1 -1 1/2 hours and then take out of oven. Remove foil, brush each Cornish hen with melted butter and return to oven un-covered. Cook for 30 minutes or until browned to your taste. Remove from oven and let cool 10 minutes before serving.


Add bread of choice, salad, or side dishes of choice. Finish with beverage and dessert of choice.
