This is a quick and easy loaf cake for all occasions. It bakes in a ribbed loaf pan which you can find on line for $9.99 compared to $25.99 in specialty cooking shops (search for ribbed loaf pan.) Hope you enjoy it as much as my family and friends do. It is a very luscious loaf cake. I appreciate your comments.
1 1/4 cup all purpose flour
1 1/4 cup sugar
1 stick of margarine – room temp.
2/3 cup of milk
2 – 2 1/2 tsp. pure almond flavoring
Slivered almonds are optional
Preheat oven to 350 deg.
In a medium bowl cream the sugar and margarine well. In separate small bowl incorporate the almond flavor with the egg and mix well with a fork. Add egg mixture to the sugar and margarine and continue beating till creamy. Slowly add the flour alternately with the milk and mix well. Spray your loaf pan with your favorite baking spray and use the slivered almonds (optional) to sprinkle evenly in the bottom of the pan. Then pour cake mixture into the pan. I usually tap several times to release the air bubbles and pierce with a toothpick. Bake in the oven for 50 to 60 min. (depending on your oven) and cake is a deep golden brown color. Test by inserting cake tester or toothpick to see inside doneness. This next step is the most important. You MUST let the cake loaf cool completely on the cake racks or when you turn you cake over it will crack and it will fall apart. (Not a pretty sight, as I have been impatient and turned out my cake and found out the hard way.)
Just before serving – dust lightly with powdered sugar (depending on preference) cut, serve, and enjoy!
Goes great in the morning with coffee or tea – also tastes great lightly toasted with butter (or margarine) – makes a great light after dinner dessert. Can also be served with fresh berries.
