Fried Rice: A Yummy and Healthy Version That Everyone Will Love?

Traditionally, fried rice is fried … in oil. And, can be delicious but not so healthy. I love to try to lighten up recipes and yet still meet the needs of my family and cook yummy meals. In my family, there are meat eaters and non-meat eaters. Sometimes it’s challenging to make one family meal that will satisfy everyone. So I often make one dish, with some add-on components.  Like a healthy version of fried rice.
Here’s my recipe:
1 cup of rice (I use 1/2 cup of brown rice, 1/2 cup white)
2 cups of water
Boil the water; add the rice, stir, lower heat to lowest setting and cover. Let sit for about twenty minutes.
While rice is cooking, it’s a good time to make the sweet & sour sauce.
Sweet & Sour Sauce
1/3 cup white or rice vinegar (rice vinegar tastes more authentic)
4 tablespoons brown sugar
2 tablespoons ketchup
1 teaspoon soy sauce
1 dash of hot sauce, like Sirache
2 teaspoons cornstarch mixed with 4 teaspoons water
Mix the vinegar, brown sugar, ketchup, and soy sauce together in a small saucepan and bring to a gentle boil. Mix together the cornstarch and water, add to the other ingredients and whisk together to thicken. Put in separate bowl or mix right into the entire dish, after everything is cooked.
1/2 white onion, peeled and sliced into small pieces
2 large carrots, peeled and sliced on the angle
1 cup broccoli crowns, cut into small pieces
1/2 cup of peas (I use frozen)
1/2 cup corn (I use frozen)
1 teaspoon of olive oil
Heat oil in non-stick pan. Add onions and stir. Let the onion turn golden but not brown. Add carrots, peas, corn and broccoli. Stir until the colors intensify. Remove from heat and place in separate bowl.
Gently beat 2 eggs and add to pan that you used for the veggies. Stir to scramble. When eggs are cooked (about 1 minute) add rice, veggie mixture and anything else (meat, seafood, etc.)
Combine everything in a big bowl—enjoy!  
You can add shrimp, pulled chicken or pork, leftovers; anything would work well with this meal!
