Jenn’s Zesty Chicken and Rice Wraps

One night I came home from work after a long day and did not know what to cook for dinner. So after staring in the freezer and refrigerator, I came up with this yummy meal. It’s quick, easy, and healthy! I hope you enjoy it just as much as my family and I did.

Ingredients:
1 pack of boneless, skinless chicken breast
1/2 to 3/4 can (14.5 ounces) petite cut tomatoes
2 cups of shredded Romano cheese
3 cups of cooked rice
1 pack of tortilla wraps
Tony Chachere’s to taste (if you don’t have Tony’s, you can use salt, pepper, and a little bit of cayenne pepper)
Roasted garlic (use to your liking)
1/2 stick of butter

Directions:
In a large pan, melt 1/4 stick of butter, add in garlic and tomatoes, then sauté. Season chicken with Tony’s and add to pan. While the chicken is cooking, add in small slices of the remaining butter. You may need a small amount of water to add to the pan periodically to keep the chicken from burning and sticking. Plus it gives good flavor! 


After chicken is cooked, cut it in to slices. Cook tortillas according to package directions. When tortillas are ready, place rice, chicken, and cooked tomatoes with shredded cheese. Roll up and enjoy!

This will feed 3 to 4 people.
