Juicy Meat Loaf: Food My Mamma Usta Make

Since my mom is from the mid-west (and her mom was too) this meat loaf is a standard recipe. My mom always served it with green beans and a baked potato – and ketchup, of course. She swears that there is nothing better than a meat loaf sandwich the next day. I can’t attest to that. I do know that whenever I need a slice of home, a nice thick slice of meat loaf does the trick. Enjoy!


Serves 8:

1 1/2 pounds ground beef

3/4 cup Quaker Oats (uncooked)

2 eggs, beaten

1/4 cup chopped onion

2 teaspoons salt

1/4-teaspoon pepper

1-cup tomato juice


Directions:

Preheat oven to 350 degrees. Combine all ingredients thoroughly and pack firmly into a loaf pan. Bake in a 350-degree oven for one hour. Let stand before slicing. Heaven!
