New Age Chicken Salad

Try this metaphysical polette delight in the Ol‘ Summertime heat, baby!

3/4 cup plain or favorite flavor yogurt

3 tablespoons mayonnaise

1 teaspoon parsley flakes

1/2 teaspoon seasoned salt

1/4 teaspoon ground black pepper

1/2 roasted chicken (2 cups diced chicken)

1/2 cup thinly sliced celery

1/2 cup diced red delicious apple (skin on for color)

1/4 cup chopped red onion

1. Mix yogurt, mayonnaise, parsley, seasoned salt, and pepper in large bowl. Add chicken, celery, apple, and onion; toss to coat well. Cover airtight with plastic wrap to allow flavors to infuse.

2. Refrigerate at least one hour or until ready to eat. Serve in sandwiches, topped on crackers, or on fresh spring greens and spinach salads.

Fresh Tip: Add 1/2 cup fresh or dried fruit such as chopped dried apricots, chopped peaches, chopped bananas, or halved grapes to the chicken salad. Or add 1/4 cup chopped nuts such as pistachios, pecans, or walnuts.
