One Potato, Sweet Potato

Don’t get me started talking about sweet potatoes because as long as I can remember I have loved eating them. It all started with my parents who were raised in the south on a farm. They grew sweet potatoes and ate them all their lives. To this very day, my parents still grow potatoes in South Carolina. They usually bake them and eat them hot right out of the oven.

My love for sweet potatoes has evolved from just baking them or putting them in a pie. I now make mini empanadas, sweet potato French fries and fried sweet potatoes with onions for breakfast with a side of sausage or bacon. I can't pass up a bake sweet potato when out for dinner. They serve them now almost as if its desert, with brown sugar and whipped butter slathered on top. Baked sweet potatoes have taken the place of baked white potatoes for dinner. The juxtaposition of sweet and savory is just right when paired with seafood or steak. Along with my white potatoes, I throw in a handful of sweet potatoes in my beef stew. It's an unexpected treat which ads a little twist to the meal. Sweet potato salad is a new dish that people are trying, but I have yet to make it. (It’s on my list) Sweet potato muffins, cakes and biscuits have been popular in the last few years.

Don't wait for the holidays to have your sweet potatoes candied or eaten in the form of a pie, eat them any day or time. Not only is this staple delicious, but they are good for you.Here are a few places you can enjoy baked sweet potatoes in the southern Pennsylvania and Delaware area: Outback restaurants and now Wendy's in both states. You can get sweet potato fries almost everywhere frozen at any grocery or cooked at many places. Try Chick-Fila (sometimes), Burger King (new), and Charlie Browns. On the waterfront in Wilmington Delaware is The Big Fish that sells great whipped sweet potatoes. You can also find sweet potato fries at the New Castle Farmer’s Market on Rt. 13 in Delaware. So eat up this sweet treat!
