I have a ninety-one-year-old mentor named Julian who I have been meeting with for the last year. One of the many reasons I love Julian is because he is a closet gourmand and he appreciates my cooking. Every week I go to his house and make him lunch (he has requested my “famous tuna melt” for the last six weeks straight), I read him something, and then we talk. Today, I made this hot chocolate concoction that he says “took him to seventh heaven.” I don’t really know what that means, but I think it’s a compliment. Here’s the recipe:
Seventh Heaven Hot Chocolate
3 cups Blue Diamond unsweetened chocolate almond milk
3 cups sweetened chocolate almond milk (Blue Diamond also)
1/2 cup Bailey’s Irish Cream (omit to make dairy free or find a tasty alternative … Frangelico would be nice)
1/4 cup Grand Marnier or Triple Sec
1/2 teaspoon cinnamon
1/4 teaspoon ground ginger
1/4 teaspoon cardamom
Heat almond milk and spices in a pot until hot but not boiling. Add Bailey’s and Grand Marnier.
Note: You can use all sweetened or all unsweetened almond milk. The mix of the 2 is how I like it. Enjoy!
