4 boneless skinless chicken breasts
2 ounces crumbled feta cheese
1 tablespoon dried cranberries
1 tablespoon sliced almonds
Salt & Pepper to taste
Olive oil or cooking spray
Preheat oven to 375 degrees
Cut a lengthwise pocket in each chicken breast.
Mix feta, cranberries and almonds in a small dish, mixing thoroughly.
Add mixture to each chicken breast, season with salt and pepper.
Heat olive oil in a cast iron skillet, or other pan that will go from stovetop to oven.
You can also cook the chicken on the stovetop and then transfer it to a baking dish. Coat the baking dish with cooking spray to prevent sticking.
Cook chicken on medium high heat until golden brown, about two minutes each side depending on the size of the chicken. Transfer to oven, and bake 15 – 18 minutes, until juices run clear.
