When You’re Dining Alone, Don’t Eat For Two

Although I am a huge proponent of the family meal (as it is a time for sharing and spending time with your family), I wanted to take a few paragraphs to remind those who live solo to eat accordingly.
It’s really hard when you’re alone to take the time to prepare food for yourself. In some ways, you may think you are not worth spending the time. But you’d be wrong! Think about it – a small pizza may sound like an easy option, but it is really a meal prepared for two people. And it’s not the healthiest option.
Here’s my stellar soup n’ salad combo which is quick and easy if you’re dining for one. I love a good salad with chopped chicken LOTS of veggies! Really, load up your salad with all of your favorite vegetables. Given the cool temperatures (March really is a lion!), you should also have some soup.
For the soup, I take V8 Juice, fresh or frozen veggies (whatever you have is good!), low sodium chicken broth, and a sprinkle of pepper to taste. You can season the soup with whatever you like – oregano, basil, ginger, etc. I like to dip into my soup, so I recommend heating up or toasting a slice of multigrain bread. YUM!
The best thing about the soup is that it freezes well! Feel free to make a lot of it and put it in small containers so you have a bunch of 1-serving sizes.
