We entertain a fair bit, and I hate trying to find things to make as appetizers.But one of my biggest hits are bacon-pineapple bites.
To make these, you will need:
3 pounds of bacon (as lean as you can find)
Three cans of pineapple chunks
One box of toothpicks
1 cup of brown sugar
Preheat oven to 450°F and get out some flat baking sheets. Make sure it has a rim, due to the bacon grease that will collect. Cut the strips of bacon with kitchen shears in to three pieces. Then wrap a piece around a chunk of pineapple and secure with a toothpick. After you have them all completed, make a glaze by slowly adding water to your brown sugar and stirring until it becomes thin enough that you can pour over the bacon pieces. Bake until bacon is fully cooked, usually about thirty minutes. The crispier, the better. These things fly off the trays as soon as I put them out, and they are simple to make.
Another easy appetizer is the sandwich pinwheel. These can be thrown together in under thirty minutes, or faster if you have helpers! To make these, you will need:
1.5 pounds sliced turkey
1.5 pounds sliced ham
One head of lettuce, washed
Three tomatoes sliced extremely thin
Three containers of onion and chive cream cheese
At least eight to ten large wraps or tortillas
First, make sure the cream cheese is not super cold. You may want to stick it in the microwave about twenty seconds. Then spread a healthy layer over one side of the tortilla or wrap, making sure you go all the way out to the edges. Then you will start putting down a layer of meat, either turkey or ham (or both), but leave about an inch at the top side of the wrap so that the cream cheese can bond with the tortilla to hold it together. Then you will put a thin layer of lettuce and tomato, and starting at the bottom, start rolling the wrap up toward the top. You will need to cut off the ends, but then you will take a sharp, thin blade and cut the “burrito” into small wheels. Simple and delicious!
