Bright Winter Salads

If I get offered one more leftover Christmas cookie [1], I think I might die. I am completely overstuffed, over-sugared, and just plain over desserts [2]. My body officially hates me and I’m ready to start being nice to her again.
Nicely enough, I have a plethora of healthy food recipes [3] to try and choose from. They’re not only healthy, but they’re easy weeknight meals – my fave. So I get to eat healthy and I don’t have to (really) cook. Win, win. Take a look at what some bloggers are making in the realm of winter salads.
I am definitely diving into some of these this weekend. Kudos to the Kitchen Parade for coming up with a delicious Red Quinoa Salad [4], Flourishing Foodie for an amazing looking Strawberry Avocado Salad [5], Authentic Suburban Gourmet for anAvocado and Corn Salad [6], and Fine Cooking for an Eggplant and Feta Salad [7].
But of course, serving a bright winter salad in my home might result in more than discouraged looks my way. You know, the “where’s the meat?” face. But, eating light is on the agenda and it’s not going anywhere. Join in the January revolution against junk food!
